These easy Smoked Salmon Bagels are ideal to whip up for a quick lunch and are elegant enough to serve to guests. Toasted bagels are topped with store-bought smoked salmon, a roasted capsicum (bell pepper) and onion dip, cucumber, capers, pickled red onions and dill to create a cafe-style treat in just 15 minutes.

Ingredients

  • 4 bagels, toasted
  • 125 g (½ cup) Nuffin roasted capsicum and onion dip (or spreadable cream cheese)
  • 2 small cucumbers, sliced thinly
  • 200 g (7 oz) smoked salmon
  • 1 tbsp baby capers
  • 2 tbsp pickled red onions or regular sliced red onions, see recipe below
  • 1 tbsp fresh dill

Instructions

  • Top the bagels with roasted capsicum and onion dip (or cream cheese if using), cucumber, smoked salmon, baby capers, pickled red onions and fresh dill. Serve immediately.
  • Pickled Red Onion Recipe: In a small jar, combine 1 finely sliced red onion, ¼ cup (60 ml) of water, ¼ cup (60 ml) of white vinegar and 1 teaspoon of white sugar. The longer the onions sit, the more they will intensify in flavour. Keep refrigerated for up to 1 week.
