Passionfruit Martini is the ideal tropical and refreshing cocktail to serve at a summer event. I have provided non-alcoholic tips so the whole family can enjoy this beautiful drink.

Ingredients

  • 2 passionfruit, halved
  • 60 ml (2 fl oz) vodka or gin (see note 1 for non-alcoholic)
  • 30 ml (1 fl oz) Passoã (see note 1 for non-alcoholic)
  • 1 tbsp fresh lime juice
  • 1 tbsp sugar syrup (see note 2)
  • 2 cups ice
  • Prosecco, to serve (see note 1 for non-alcoholic)

Instructions

  • Scoop the seeds from one of the passionfruit into a cocktail shaker, add the vodka or gin, Passoã, lime juice, sugar syrup and ice.
  • Shake well, strain into two cocktail glasses, top with prosecco and serve with half a passionfruit in each glass.

Recipe notes

Note 1 – Prefer to make these non-alcoholic? Substitute the vodka/gin and Passoã with extra passionfruit pulp and use sparkling passionfruit drink to top up instead of prosecco!
Note 2 – To make a simple sugar syrup, combine equal parts sugar and water in a small saucepan. Heat over medium–high and, once simmering, stir the mixture for 2–3 minutes until the sugar has dissolved. Cool and refrigerate in an airtight container for up to 3 weeks.
