Can I use pre-grated cheese?
Freshly grated cheese melts better and gives a creamier texture, but pre-grated works in a pinch!
What if I don’t have sourdough?
Any dense, crusty loaf like pane di casa or ciabatta will work beautifully.

Ingredients
120g(4¼oz)unsalted butter, melted
2tbspfinely chopped fresh flat-leaf parsley
1tspfreshly minced garlic
1tspsea salt flakes
¼tspfreshly cracked black pepper
1sourdough loaf or thick pane di casa
225g(1½cups)freshly grated mozzarella

Make the garlic butter – Preheat the oven to 200°C (400°F) (180°C/350°F fan-forced).
Combine the butter with the parsley, garlic, salt and pepper in a medium bowl. Set aside.
Score the bread loaf – Score the bread on an angle into diamonds (see photo), taking care not to cut all the way through.
Drizzle the garlic butter onto the bread – Use a spoon to drizzle the butter mixture into all of the crevices and then stuff with the mozzarella. It doesn’t need to be perfectly distributed – the more rustic, the better!
Bake – Wrap the bread in a large sheet of foil, place on an oven-safe baking tray and bake for 20 minutes. Remove the foil from the top of the bread and bake for a further 8 minutes or until the cheese has melted and the top is crispy and golden.
Serve – Serve for everyone to tear and share!
