Just as good for a busy family weeknight or easy entertaining, this delicious and elegant Prawn (Shrimp) Spaghetti recipe can be on the table in under 25 minutes. Prawns (shrimp) are cooked in a beautiful light herby tomatoey sauce until tender and juicy.

Ingredients

PRAWNS (SHRIMP)
  • 300 g (10½ oz) fresh prawns (shrimp), peeled and deveined, tails left intact
  • ½ tsp sweet paprika
  • ½ tsp sea salt flakes
  • ½ tsp freshly cracked black pepper
PASTA
  • 400 g (14 oz) spaghetti
  • 4 tbsp olive oil
  • 4 garlic cloves, freshly chopped (about 1 tbsp)
  • ½ red onion, finely diced
  • 250 g (9 oz) cherry tomatoes
  • 1 tsp sea salt flakes
  • 1 tsp freshly cracked black pepper
  • 2 tbsp tomato paste (concentrated puree)
  • 100 g (1 cup) freshly grated parmesan, plus extra to serve
  • 2 tbsp finely chopped fresh flat-leaf parsley

Instructions

  • Season the prawns – Combine the prawns, paprika, salt and pepper in a small bowl. Toss to coat.
  • Cook the pasta – Cook the spaghetti as per the packet instructions, minus 1 minute, and reserve 1 cup (250 ml) of the cooking water (take it out of the pot using a ladle or mug before draining the pasta).
  • Cook the prawns – Meanwhile, heat 2 tablespoons of olive oil in a large, heavy-based frying pan. Once hot, add the prawns and cook for 1 minute on each side. Remove the prawns from the pan and set aside.
  • Make the sauce – Add 2 tablespoons of olive oil, the garlic and red onion to the same pan. Stir for 30 seconds until fragrant. Add ½ cup (125 ml) of the pasta cooking water.
  • Add the cherry tomatoes, season with salt and pepper and cook for 2–3 minutes. Squash the tomatoes with the back of a fork to release their juices.
  • Add the tomato paste and the remaining ½ cup (125 ml) of pasta cooking water and stir to combine.
  • Add the pasta – Drain the spaghetti and toss it through the sauce.
  • Stir through the parmesan.
  • Add the prawns – Add the prawns to the pan, stir through the parsley and serve immediately.
  • Serve – Sprinkle with extra parmesan and salt, if desired, then serve.

    I think we would have either this dish or your a Tuscan Prawn pasta at least once a month with it being completely devoured each time including a 8 and 5 year old.
    For convenience I use frozen prawns and will sometimes used canned cherry tomatoes.
    Thank you for your easy recipes giving me the confidence to cook with seafood.
