For even more flavour, you can marinate the chicken the day before you plan to cook it, making this even faster to prepare at dinner time. Serve with a fresh Greek salad, a dollop of tzatziki and some flatbread to complete the dish.

On the table in just 15 minutes, this Easy Greek Chicken recipe is the ideal nourishing meal for a busy weeknight. The amazing flavour comes from economical pantry staples like oregano, paprika, garlic and lemon, then all you need is the chicken and some flatbread to serve on the side. I also love to pair this with tzatziki, which you can either buy or make yourself and a simple Greek salad.

Ingredients

  • 6 boneless skinless chicken thighs, fat trimmed (can be substituted with chicken breast)
  • 1 tsp sweet paprika
  • 2 tsp dried oregano
  • 1 tsp sea salt flakes
  • ½ tsp freshly cracked black pepper
  • 1 tbsp freshly minced garlic
  • 60 ml (¼ cup) olive oil
  • 1 lemon, juiced and zested
  • Greek salad, to serve
  • Flatbread, to serve
  • Tzatziki, to serve

Instructions

  • Cover the chicken thighs with baking (parchment) paper and pound them using a rolling pin or mallet to an even thickness.
  • Combine the chicken thighs with the remaining ingredients in a bowl, tossing to cover the chicken well. Cook immediately or marinate for up to 24 hours for deeper flavour.
  • Heat a large frying pan over medium–high heat. Cook the chicken for 8 minutes, turning once halfway through.
  • Add 2 tablespoons of water to scrape up all of the crispy bits on the bottom of the pan and continue cooking for 2 minutes or until the chicken is cooked through.
  • Serve with Greek Salad, flatbread and tzatziki.

    This was so, so easy and absolutely delicious, thank you so much! Will definitely be going into the rotation. My husband and I have always been a bit funny with chicken thigh, but since I’ve been following you I have gained so much more confidence cooking it – and it’s so, so much better! Rather than what can usually be dry old breast. Because I am slightly insane and have the fear of god instilled in me when it comes to pink chicken, I do cover the thigh with a bit of alfoil once I flip it, but it works well. Thanks again!

The great thing about it is that it is so forgiving to cook, so even if you cook it longer, it will still be juicy and delicious.     I’m not the greatest cook, I always stick to recipes. This was so easy to follow and was absolutely delicious. I went all out and made your Greek salad, tzatziki dip and flatbreads for our anniversary. I must have used every bowl and utensil in my kitchen and it probably took me about 2hrs to make (kids, chatting etc) but gosh it was worth it. My husband said it was the best thing I’ve ever cooked. It’s only took 11yrs for him to compliment my cooking! Hahaha.
