Cranberry Brie Bites

I found this viral recipe on Instagram and knew immediately I had to try it. Crispy little parcels of pastry stuffed with oozing, melty brie and sweet cranberry sauce is a match made in heaven – especially when these are so easy to prepare!

Cranberry Brie Bites

Store-bought puff pastry is cut into squares and then tucked into mini muffin pans before being piled high with cubes of brie, cranberry sauce, walnuts and a sprinkle of rosemary. These Cranberry Brie Bites look impressive, take very little preparation time and are the perfect moreish appetiser to get your party started!

Can brie cheese be frozen?

Yes! One of my greatest, long-standing hacks is buying brie or camembert cheese while it is on special and freezing it for up to 2 months. It needs to be thawed in the fridge overnight prior to use.

Recipe notes

Source – Recipe inspired by Kalefornia Cravings. I found this recipe when I was scrolling through Instagram and knew immediately I needed to recreate it. You can view the original recipe here.

MAKE AHEAD

Cranberry Brie Bites are best made and eaten immediately. I like to assemble them 30–60 minutes prior to guests arriving and refrigerate them until I’m ready to bake.

LEFTOVERS

Leftovers (if, miraculously, there are any!), at a push, can be refrigerated and either eaten cold or reheated in the oven to avoid waste, but are best enjoyed immediately, straight out of the oven.

So easy to make and everyone loved them. Perfect appetiser for Christmas Day!

    • Hi Kat, this is music to my ears! 🎶 Thanks so much for the rating too. Nic x

  2. I am going to make these for an upcoming work lunch – I notice you mention making 16 squares out of one sheet of puff – what size tins are you using? I have a regular muffin tray (12 hole) and mini muffin tray (24 hole). Any advice which you think would be better?

    • Hi Rebecca, definitely go with your mini muffin tray! Nic x

  3. Can I substitute the puff pastry for filo pastry? I accidentally bought the wrong type of pastry.

    • Hi Tiwi, unfortunately this wouldn’t work with filo. Nic x

Beautiful! So yum! Made for my daughters ‘Christmas in July’ gathering in Melbourne, . Didn’t do the walnuts, just ran out of time, but I’m sure they would compliment beautifully – I love walnuts!

    • Hi Jude, thanks so much for this lovely feedback! I’m so glad they worked out well for you all. Thanks also for the rating, Nic x

Made these for Christmas and they were an absolute hit! Didn’t have walnuts so I substituted with silvered almonds and they still tasted delicious.

Next time I think I’ll add a bit more cranberry sauce as I used slightly less than 1/2 teaspoon.

It was a crowd pleaser – I’ll definitely make these again!

    • Hi Kay, I am absolutely thrilled that you chose to make this for Christmas Day! Wow! Thanks for your wonderful feedback and sharing your recipe tweaks. Nic x

These were a hit when we did some recent entertaining! Can’t wait to make them again.

Is there an alternative to the nut topping? Our daughter has a nut allergy and even though it was a small amount and she didn’t eat or touch them, she had a mild reaction to the oils when others ate them.
I’d love to make again but with an alternative if you can suggest one thank you 😉

    • Hi Nic! I can completely relate to this! We have a nut allergy at our place too. I make half with the nuts and half without and they are equally delicious! If you did want to add some crunch, you could also try some pepitas (pumpkin seeds), sunflower seeds or sesame seeds. I hope that helps, Nic x

      • Excellent! I’ll try the sunflower seeds as we have some in the pantry already. Thanks for your suggestion! Keep up your amazing work x

        • Hi Nic, good luck! Let me know how you go. Nic x
